Pork Ribs

Ingredients
1/2 kg pork ribs
3 g basil leaves
9 g ginger
9 g garlic
15 g lemon grass
15 g galangal
4 g cinnamon sticks
5 g black cardamom
5 g bay leaf
25 g tomato ketchup
7 g meat masala
4 g chicken broth powder
20 g cooking oil
3 g coriander, chopped
salt to taste
barbecue sauce to glaze

Method
Hand-pound the lemon grass, galangal, ginger, garlic, cinnamon stick, black cardamom, bay leaf, tomato ketchup, oyster sauce, cooking oil, broth powder, cinnamon powder, basil, meat masala and salt.
Mix well.
Marinate half kg pork ribs with this spice and herb mix and leave overnight.
In an oven, steam roast the ribs at 180ºC for an hour on one side.
Remove the ribs from the oven.
Flip over and repeat for the other side for another hour.
Ensure both sides are cooked well.
Once done, glaze the pork with caramelised barbecue sauce and charcoal grill.
Serve hot.
