Crispy Honey & Ginger Chicken with Sesame

Ingredients

• 10 ml vegetable oil

• 1 egg

• 5 g cornstarch

• 10 g cornflour

• white pepper

• 3 g garlic

• 5 g grated ginger

• 2 g sesame seeds

• 20 g chicken breast, thinly sliced

• salt

For the sauce

• 5 ml sesame oil

• 5 g ginger, chopped

• 3 g garlic, chopped

• 10 ml Chinese rice vinegar

• 10 ml honey

• 3 ml sriracha sauce

• 5 g tomato ketchup

• 3 g brown sugar

• 10 ml soy sauce

 

Method

Marinate the chicken with ginger, sesame oil, garlic, salt and pepper. Set aside.

Dredge the chicken in the cornflour, then dip in the egg (make sure all of the chicken is covered in egg wash), and finally dredge it in the cornstarch.

Heat oil in the wok and fry the chicken till evenly browned and crispy.

Heat oil in another wok and stir-fry the ginger & garlic. Add all the other sauces one at a time. Toss the chicken in the sauce, add the honey and the sugar.

Finish with sesame seeds. Adjust seasoning.
