Chicken & Granny Smith on Mini Corn Toastadas

Ingredients

• 3 g hickory wood

• 60 g chicken breast

• 3 g thyme

• 5 ml olive oil

• black pepper

• salt

• 20 g Granny Smith apple

• 5 g fresh fennel, chopped

• 2 gm Dijon mustard

• 10 gm Philadelphia cheese

• 2 g tarragon, chopped

• 3 g pickled onions

• 3 mini toastadas

• 2 g chives, chopped

• arugula leaves

• nasturtium flower

 

Method

Marinate the chicken with olive oil, thyme and salt.

Grill it on a charcoal grill till cooked.

Finely cut the chicken and the green apple into even-size brunoise.

Mix all the ingredients evenly. Adjust the seasoning.

With a smoke gun fired by hickory wood, smoke the chicken mixture in a well-enclosed container and allow to stay till the flavours are well- incorporated.

Evenly portion the chicken mixture in mini tarts and garnish with arugula leaves and nasturtium flower.
