Pan Poli

Ingredients

• 1 cup rice flour

• water • 1 tsp ghee

For the filling

• 1 cup grated coconut

• 3/4 cup jaggery

• 1/2 cup flattened rice, washed well

• cardamom powder

• dry fruits like almond, cashews

and raisins

• banana leaves

• 2 tsp ghee

Method

Knead rice flour with warm water, 1 tsp ghee and a little salt to form a smooth dough.

For the filling

In a pan, add 2 tsp ghee and fry the finely chopped dry fruits. Add coconut and jaggery and keep stirring well. Add the flattened rice. Keep stirring till the coconut is almost roasted and the jaggery melted to form a lovely filling. Add cardamon powder.

Now wash the banana leaves well. Cut them into large squares. Take a round ball of the rice dough and roll it on the banana leaf to form a round or oval shape. Fill the mixture on half of the rolled dough and cover the second half of the dough along with the leaf. Press the sides so that the filling does not come out. Steam the pan poli in a steamer for 15 minutes. Serve hot.
