Mahua Candy
Ingredients
• 2 cups dry mahua flower
• 2 cups jaggery powder/grated jaggery
• 1tsp black pepper powder
• 1/4 tsp ginger powder
• 1 tbsp roasted cumin seeds powder
• pinch of hing (optional)
• jaggery powder
• black salt to taste
Method
Soak dry mahua flowers in half a glass of water and keep for 20 to 30 minutes. Blend it to a fine paste.
Heat a pan, add ghee and jaggery and stir well. Once the jaggery melts to syrup, let it boil and stir continuously, then add mahua paste, mix well and cook on medium flame.
Cook till mixture becomes thick and the candy begins to leave the sides of the pan.
Now add black pepper powder, ginger powder, roasted cumin seeds powder, pinch of hing, black salt, and give it a nice mix.
Check the consistency of the candy mixture. Cool the mixture completely, now you can see the mixture has thickened, forming a dough.
Take a tsp of the mixture and wrap it in cling wrap. Finally, enjoy mahua candy as a mouth freshener after your meals or as a toffee.
