Champaran Mutton Curry
Ingredients
• 500 g tender mutton, with bone
• 500 g onions, sliced
• 2 tbsp ginger-garlic, crushed
• 2 whole garlic pods
• 2" cinnamon
• 5 cloves
• 5 green cardamom
• 2 black cardamom
• 10 peppercorns
• 2 bay leaves
• 5 dry red chillies
• 1/2 tsp chilli powder
• 1 tsp Kashmiri red chilli powder
• 1/4 tsp turmeric powder
• 1 tsp coriander powder
• 1/2 tsp cumin powder
• 1/4 tsp fennel seeds powder
• 1/4 tsp garam masala powder
• 4 tbsp hot mustard oil
• salt to taste
Method
Add all the above ingredients in a bowl, mix well, and let it rest for 30 minutes.
After marination, add ghee to a handi and add the marinated ingredients in it. Seal the handi with dough, close the lid, cook on high flame for 3 minutes and then 20 minutes on low flame.
Give the handi a mix without opening the lid and cook again for 10 minutes on low flame. Place the handi on a hot tava for 15 minutes.
After resting time, unseal the lid, give the mutton a mix. Champaran Mutton is ready to serve.
