Crispy Garlic Fried Chicken

Ingredients

• 500 g boneless chicken, cut into dices

• 100 g garlic, minced, crisp deep-fried

• 4/5 green onions (cut into 1” size)

• 8/10 dry red chillies (cut into 1” size)

• 3/4 fresh red chillies, chopped

• 2 cups of oil, for frying

• 1/2 cup cornflour

Seasoning

• 1/2 tsp salt (as per taste)

• 1/2 tsp white pepper powder

• 1 tsp chicken broth powder (optional)

• 1 tbsp light soy sauce

• 1 tbspshaoxin wine

• 1 tsp sugar

• 2 tbspcornflour

• 1/4 cup water

 

Method

Mix all the seasoning in a cup.

In a large bowl, mix the diced chicken with 1/2 cup cornflour.

Heat the vegetable oil in a wok/pan and fry the chicken pcs on medium heat for 3/4 minutes till they are crisp and cooked, remove the chicken and drain the oils.

In the same wok, add 1 tbsp oil and add chopped garlic, ginger and sauté for 2 minutes till golden brown, then add fresh red chillies, dry red chillies, green onions along with fried chicken and toss it together, add the seasoning sauces and cook for 2/3 minutes till all the chicken is well-coated.

Serve with steamed rice.
