The CranWellness Bowl
Ingredients
1/2 cup U.S Dried Cranberries
1 cup mixed lettuce leaves, washed and picked
1/2 cup rocket leaves
1 medium-size sweet potato (cooked)
1 cup shredded carrots
1/3 cup sliced spring onions
1/3 cup corn kernels
1/2 cup sprouted chickpeas
1/3 cup Feta cheese
For the dressing
2 tbsp olive oil
1 tsp mustard
salt and pepper to taste
2 tsp dried cranberries
1 tbsp lemon juice
Method
Toss all the ingredients in a bowl and chill well.
Blend the ingredients for the dressing smoothly and toss the salad with the dressing.
Serve immediately.
