Ingredients 500 g broccoli 100 g almond 100 ml cream 50 g butter 80 g onion 50 g celery salt to taste
Method Blanch the broccoli and chill it in ice water. Sauté onion and celery in butter for few seconds. Add broccoli, peeled almonds and water and cook for 3 -4 minutes. Let it cool and make fine purée and finish with butter and cream. Serve hot
