Jasmine Tea- infused Prawns on an Avocado-Tomato Terrine

Ingredients
• 8 prawns (shelled, 75 g each)
• 90 ml lemon juice • 80 g smoked Scamorza cheese • salt to taste
• 4 boiled eggs • 15 g fennel
• 240 g tomato • 250 g avocado
• 10 g paprika powder • 20 g ginger paste • 10 g basil leaf • 40 g garlic
• 8 g pepper powder • 120 ml olive oil • 8 g parsley • 120 g onion • 60 ml refined oil • 10 g celery • 20 ml jasmine tea • 10 ml Tabasco sauce • 40 g Iceberg lettuce • 20 g coriander stems
Method
Clean the prawns, de-vein and wash thoroughly. Marinate with ginger paste, lemon juice, salt and pepper powder. Cut halves of avocado, scoop the pulp and chop it, Grate the egg white and cheese. Quarter the tomato, de-skin and de-seed, chop and keep aside. Take a pan, add refined oil, chopped garlic and sliced onion, brown separately and keep aside. Chop, celery, basil, fennel, ginger and coriander stems.

Take a saucepan, add 500 ml water and simmer it. Add the jasmine tea and allow it to simmer for a few minutes. Take a sieve to the size of the pan, place it over it, put the marinated prawns and cover it with a lid, switch off the heat after 3-4 minutes. Let this stay for 20 minutes. Take a ring mould for each portion and add the tomatoes mixed with chopped coriander stems, fennel, celery, basil leaves, salt and pepper, and put in a pre-heated oven at 180° C for 15 minutes. Add 10 ml olive oil in each mould and the grated Scamorza and continue cooking in the oven for 5 minutes. Take a mixing bowl, add chopped avocado, lemon juice, olive oil, Tabasco sauce, keep aside. In another bowl, make 60 ml olive oil-lemon dressing with salt, paprika.

Serving    
Take a fresh ring mould of the same size and put it on the serving plate. At the base, add Iceberg lettuce with a drizzle of lemon dressing and slip the tomato cheese from the previous mould followed by grated egg, browned onions, ginger, and avocado. Finally, add chopped parsley, browned garlic and the warm prawns finishing with lemon dressing. Serve it as soon as possible.
