Phat Kra Phao Kai
(Stir-Fried Holy Basil with Chicken)
Ingredients
• 150 g chicken, thinly minced
• 1 tbsp roughly pounded bird’s eye chilli
• 6 cloves garlic
• a sprig of shallots
• 150 g holy basil leaves (kaprao leaves), rinsed and drained well
• 3-4 tbsp vegetable oil
• 1/2 cup chicken broth
Seasonings
• 1/2 tbsp sugar
• 1 tbsp fish sauce
• 1 tsp oyster sauce
• 1/2 tsp dark soy sauce
• 1/2 tsp soy sauce
Method
Add the oil, shallots, chilli and garlic in a wok and fry for 3 minutes at medium heat.
Add the minced chicken, stir it and turn up the heat to high.
Add sugar, fish sauce, oyster sauce, soy sauce, dark soy sauce and stir-fry for 1 minute.
Add chicken broth to the frying-pan. Stir-fry until the broth is almost evaporated.
Add basil leaves and stir-fry until they are wilted.
Serve over cooked rice with a sunny side up egg as garnish.
