Crab Murunga Curry by Chef Sunanda Kumar
Ingredients
1 kg lagoon crab, cleaned
30 ml coconut oil
50 g onion, sliced
15 g soaked goraka
1 sprig curry leaves
5 g green chilli
10 g curry powder, unroasted
5 g garlic, minced
5 g black pepper, crushed
5 g turmeric powder
10 g red chilli powder
5 g mustard seeds
5 g fenugreek seeds
5 g mustard cream
200 ml thick coconut milk
100 g drumstick leaves
1 piece rampe (pandan leaf)
1 piece cinnamon
salt to taste

Method
Wash the crab and crack the claws. Heat the coconut oil in a pan, add mustard seeds and allow to splutter.
Next add fenugreek, curry leaves, rampe, garlic, onion, green chilli and sauté till onion gets tender.
Then add turmeric powder, chilli powder, unroasted curry powder, black pepper and sauté it for further 2 minutes.
Add mustard cream.
Thereafter add water, goraka, cinnamon, salt and allow to boil.
Add the crab and allow to cook.
Once the crab is cooked, add the coconut milk and let it boil. Add drumstick leaves and check the seasoning.
Remove from the heat and serve.
