After experimenting with a multiplicity of cuisines, the flavour of the moment in Delhi seems to be Turkish. It embodies the best of both worlds: each of the restaurants that showcase this cuisine is headed by a Turkish chef, for greater authenticity, and diners just love the cuisine: unfamiliar enough to be interesting yet familiar enough to be a regular option. Cosy Box is the brainchild of Akshay Anand, fast becoming one of the restaurateurs to look out for. He has taken a franchise of the brand that is from Cannes and the menu includes Fig and Chevre Salad, Mushroom Cappuccino and Kochujang Lamb Chops. However, the star of this particular show is the Lamb Urfa: named after the city of Sanliurfa, it is one of the three famous kebabs of a country where kebabs are accorded prime status! Urfa kebab, grilled on a skewer, is composed of a high percentage of fat and very little spice, so that the quality of the meat shines through. All that notwithstanding, it is prepared table-side by being folded in a thin flour wrap rather like a rumali roti, slathered over with toum, the garlic-heavy paste of the Middle East, onion slices, lettuce and lime. Traditionally, the chef assembles it at your table and feeds you the first bite himself! There’s a chicken version too, without fat, so the difference is huge.
