Ingredients
200 gm slice white bread
120 gm orange marmalade
500 ml milk
50 ml fresh cream
250 ml sugar
4 whole eggs
yolk of 4 eggs
20 gm cinnamon powder
20 ml vanilla essence
1 grated lemon zest
Procedure
Prepare buttered baking dish. Spread marmalade on slice bread evenly and set aside. Boil together milk cream and sugar. Mix together eggs, yolks and cinnamon and temper with hot milk by adding a little milk at a time to the egg mixture until the mixture is about the same temperature as the milk. All the mixture should now be sieved and lastly add vanilla and lemon. Layer bread inside of buttered mould until full. Pour in milk mixture and allow for mixture to be soaked by bread.
Top off with nice bread sliced on top for garnish. Bake in ban marie at 150oC for about 40 minutes or until golden brown and mixture is firm to the touch. After bake let it cool completely before serving (over night would be good also). Serve warm with a bourbon vanilla sauce or your favourite ice cream would also work well.
