Hemant Oberoi, the presiding deity of the Taj Mahal Hotel's kitchen in Bombay, has been executive chef for 14 years. He has the distinction of having cooked for many a VVIP; from the Shah of Iran and Henry Kissinger to Presidents George Bush and Francois Mitterand.
His biggest contribution to cooking, Hemant Oberoi feels, is that he changed the mindsets of people and made them aware of modern, trendy foods. In the late 1980s, Oberoi opened the Zodiac Grill which even today is considered as one of Mumbai's most classical dining places.
