Sampan Ginger Pork Honey Sauce


GINGER PORK HONEY SAUCE


Ingredients:

200 gm sliced pork (fried)
10 gm diced ginger
50 ml honey
10 gm dry red chilli
10 ml black vinegar
50 gm capsicum (cut into cubes)
50 gm dry onions (cut into cubes)
5 gm monosodium glutamate
10 ml sesame oil
10 ml rice wine
20 gms cornflour
5 ml oil.

Method:

Heat oil, add ginger, dry red chillies, Honey and saute for sometime. Then add capsicum/onions, monosodium glutamate, salt/pepper to taste. Add the fried sliced pork and finish it with rice wine, vinegar and sesame oil. Serve hot.

DICED CHICKEN DRY RED CHILLI SZECHWAN STYLE


Ingredients:

200 gm boneless chicken (diced)
10 gm dry red chilli
10 gm ginger/garlic
50 gm spring onions
1 egg
50 gm cornflour
10 ml soya sauce
10 ml rice wine
10 ml vinegar
Oil for frying and cooking
Salt and pepper to taste.

Method:

Marinate chicken with egg, salt and cornflour and fry till half cooked.

Preparation of sauce:

Heat oil in the pan. Add dry red chillies, ginger, garlic and saute. Add soya sauce, rice wine, stock and vinegar. Simmer it for sometime. Then add the half-cooked chicken and spring onions. Add cornflour (mixed with water) to thicken.
Serve hot.
