Boston Style Apple Cobbler

Ingredients:
225 gm sifted flour
225 gm castor sugar
Pinch of salt
2 gm baking powder
70 gm butter melted
340 gm fresh milk
Procedure: Mix all ingredients in stainless steel bowl and whisk until smooth.

Filling:
250 gm apples
85 gm castor sugar
2 gm cinnamon powder
10 gm flour
2 gm butter
2 gm lime juice
Procedure: Peel and dice apples into quarter inch cubes. Place in stainless steel bowl and toss with remaining ingredients.

Sour cream topping:
Ingredients:
225 gm cream soured with lemon
1 egg, whole
3 gm castor sugar
To taste vanilla essence
Procedure:
Sour the cream with some lemon juice, add the egg and castor sugar, whisk till combined, finish by adding vanilla.

Preparation of cobbler:
Get desired mould and spread a quarter inch of the base onto bottom of mould. Place the chopped apple mixture on top until mould is full. Place in oven at 180 C till base is cooked along with apples approximately 20-25 min. Pour sour cream topping on top of apples and finish by topping with streusel. Bake approximately 10-15 min. longer or until mixture has set. Allow to cool slightly before serving.

To make apple chips:
Thinly slice two to three fresh apples. Place in deep dish. Boil in water along with 750 gm castor sugar. Pour over sliced apples. Cover with clean film and allow apples to poach overnight. Remove each slice carefully from syrup while placing onto lined tray. Gently pat dry each slice to remove excess moisture. Place in low heated oven, 130 Cto 150 C, allow to dry until crisp. two to three hours.


Silky Eggless Chocolate Mousse

Ingredients:
350 gm Morde bitter chocolate, chopped
500 gm whipped cream

Procedure:
Melt chocolate over double boiler till smooth. Whip cream until medium peaks. While whisking the cream, gently mix in the warm chocolate till well combined. At this stage you may pipe or mould the mousse as you wish.
Options: To make white or milk chocolate mousse, substitute the bitter chocolate for the Morde milk or Morde white chocolate and repeat same procedure as above.
