Vietnamese Lemongrass Chicken


Ingredients:
200 gm chicken, minced
2 lemongrass stalks, finely chopped
2 tbsp cholesterol-free
cooking oil
2 cloves garlic, minced
4 chillies, finely chopped
1 tsp sugar
1 tbsp fish sauce

For wrapping and garnish:
10 clean lettuce leaves
1 red chilli, finely sliced
2-3 spring onion stalks, finely sliced
10-12 mint leaves
10-15 sheets rice paper, moistened

Procedure:
Heat oil in wok. Add lemongrass and garlic, stir-fry lightly. Add chilli. Add chicken, then fish sauce, stirring constantly. Add sugar and continue to stir-fry, approximately 3 minutes. When cooked, place 1 tbsp onto a small lettuce leaf. Add garnish of chilli, spring onion and mint. Wrap it into a neat packet. Roll this up in moistened sheet of rice paper. Serve and enjoy!
