Coconut Fish Curry

Ingredients:
4 Pomfret pieces
10 red chillies
1 tbsp coriander seeds
1 tbsp cumin
1/2 tbsp mustard seeds
8 pepper corns
1/2 grated coconut
1/4 tsp turmeric powder
15 gm tamarind
6 garlic cloves
2 onions
20 gm coconut oil
1 sprig of curry leaves

Procedure:
Grind all the spices along with half the quantity of garlic & onion. Slice the rest of the onion & garlic. In a frying pan saute slices of onions & curry leaves till golden brown. Continue frying by adding the ground masala. Cook for a few minutes. Now add the pieces of pomfret & cook till it is done. Adjust by the seasoning & serve hot.



Chicken Curry With Coconut Milk

Ingredients:
800 gm chicken, boneless
1 1/2 coconut
1/2 grated coconut
15 red chillies
1 tbsp coriander seeds
1 tsp cumin
10 methi seeds
1 tsp peppercorns
ghee for frying
1/2 chopped onion
1/4 tsp turmeric powder
10 garlic flakes
1 tbsp butter
salt to taste
juice of 1 lemon

For seasoning:
2 tbsp ghee
1 chopped onion
1/2 tsp garam masala

Procedure:
Remove coconut milk from the 11/2 coconut, using hot water, keep aside. Roast the other 1/2 coconut till light brown. Fry the spices in little ghee. Also fry the chopped onions in ghee & grind all these together with turmeric powder & garlic flakes. In a thick-bottomed pan, heat ghee, saute chopped onions, add the chicken pieces. Saute further. Add the ground masala, the coconut milk and seasoning and simmer till the chicken is cooked. Lastly add the thick coconut milk & simmer further for a few minutes. Temper lastly with chopped onions and garam masala and pour over the curry, remove and serve hot.



Dry Mutton Curry With Coconut Milk

Ingredients:
1/2 kg mutton, boneless
1 chopped onion
3 tbsp ghee
salt to taste
juice of 1 lime

For masala:
1 onion
15 red chillies
one-inch piece of ginger
4 flakes of garlic
4 cloves
2 cinnamon bits
1 tsp poppy seeds
1 tsp coriander seeds
Milk of 1 1/2 coconuts

Procedure:
Grind all the masala ingredients to a fine paste.

Heat ghee and fry the onions till brown, add the masala and fry well, add mutton, salt,one cup water and cook until brown.

Add lime juice and simmer for 5 minutes.

Lastly add the coconut milk, stir and remove from flame

Serve garnished with coriander leaves.
