Aam Panna

Ingredients

•  3-4 medium-size green raw mangoes

•  1/2 cup jaggery or brown sugar

•  1 tbsp roasted cumin powder

•  1 tsp black salt

•  1/2 chaat masala

•  1/2 cup mint leaves

•  2 + 1 cup water

•  1/4 tsp red chilli powder

•  1/2 tsp salt

•  1/2 tsp sugar

•  1/2 tsp lemon

•  ice cubes

•  mint leaves

Method

Peel the skin off the mangoes and place along with 2 cups water in a saucepan. Bring to a boil. Simmer for 10 minutes or you can pressure cook mangoes with water till soft or for 3-4 whistles. Let it cool down completely and then mash it to get the pulp with the help of a spoon and discard the seeds. Now add completely cooled mango pulp into a blender along with mint leaves and jaggery. Add roasted cumin powder, chaat masala, black salt and 1 cup chilled water, blend it and make a smooth puree. In a small plate, add chilli powder, salt and sugar, and mix it well.

Take a serving glass, rub lemon on the edge and turn it upside down, coat the chilli mix on the edge. Add ice cubes into the glass and fill the mango puree till 1/4 of the cup, add some chilled water and mix it with a spoon.

Garnish it with mint leaves and serve chilled.
