Crackling Spinach
Recipe by Chef Penpa Tsering
Ingredients
250 g spinach
50 g cornflour
200 ml oil
4 g sesame seeds
4 g salt
4 g sugar
Method
Wash and clean the spinach and dry using a clean kitchen towel.
Finely chop or julienne the spinach.
Dust the spinach with salt, pepper and cornflour
In a wok, heat oil for deep frying.
Add the spinach and fry till crisp.
Sprinkle white sesame seeds and sugar. Serve.
