Fried chicken in various forms is one of Koreas most popular street foods. You see it everywhere served with all kinds of sauces, on skewers and by the plateful
Ingredients
500 g boneless chicken
1 cup of plain whole-milk
1-1.25 cups of maida or all purpose flour
5 cups of cooking oil
1/2 tsp ground black pepper
1 tsp peanut powder
salt to taste
For the sauce
3 tbsp Korean chilli paste or Kashmiri chilli paste (seeds removed)
3 tbsp soy sauce
3 tbsp minced red chilli
1 tbsp tomato ketchup
5 tbsp garlic, minced
1 tbsp green onion, finely minced
sugar
1 tsp black pepper
3 tbsp water
1/2 tsp chilli powder
2 tsp ginger paste
Method
Combine all ingredients of the sauce and set aside.
Soak the chicken in milk. Then drain.
Combine flour, pepper, 1 tsp salt and stir.
Add the chicken pieces and toss well.
Add more water if batter is dry. The chicken must be completely coated but not too wet. The flour must cling to the chicken.
Deep fry in hot oil until golden brown and fully cooked.
Heat the sauce in a large skillet on medium heat until bubbly and thick about 5-7 minutes.
Taste for sweet, spicy and salt and adjust to taste.
Add the fried chicken and toss.
Sprinkle with peanut powder.
Eat the chicken with beer!
