Charcoal Roast Aloo Chokha with Rajgira Luchi

For aloo chokha

Ingredients

• 2 medium potatoes

• 1 tbsp raw mango, chopped

• 1 tbsp fresh pomegranate seeds

• 1 fresh green chilli, chopped

• 1 tbsp desi ghee

• saindha salt to taste

 

Method

Roast the potato on charcoal and keep aside for 10 min.

Peel and mash the roasted potatoes.

In a mixing bowl, add the mashed potatoes, chopped green chilli, fresh pomegranate seeds and chopped raw mango and mix well.

Add saindha salt and lemon juice again and mix it in.

Heat the ghee and pour it in the mixture.

Aloo chokha is ready to serve.

 

For rajgira luchi

Ingredients

• 200 g rajgira flour

• 2 tbsp black raisins, seedless

• saindha salt to taste

• warm water as required

• ghee for frying

Method

Finely chop the seedless black raisins.

In a mixing bowl, add rajgira flour, chopped raisins and saindha salt. Mix it well with the help of hands. Use both the palms to knead the mixture well till the raisin chunks mash and blend well.

Add warm water and make a semi-hard dough. Cover with a cloth and set aside for 10 minutes.

Make equal-sized dough balls and roll them out with the help of a rolling pin to prepare slightly thick puris.

In a frying pan, heat ghee. Fry the puris well from both the sides till a nice golden texture appears.

Remove the puris from the frying pan and place on tissue paper to soak the excess ghee.

Puris, or luchi, are ready.

Serve hot and fresh luchi with charcoal roasted aloo chokha.
