Zesty Cream Cheese Fingers
Ingredients
For the crust
• 2 cups plain flour
• 1/2 cup granulated sugar
• 1/2 tsp salt
• 200 g butter, chilled, cut into cubes
For the filling
• 225 g Food Tree cream cheese at room temperature
• 2 cups granulated sugar
• 1/4 cup plain flour
• 3/4 cup freshly squeezed lemon juice
• 6 eggs
• 1 tsp vanilla extract
• 1/3 cup powdered sugar
Method
Pre-heat oven to 180° celcius
Line a 9x13" pan with aluminum foil or parchment paper with lots of over-hang to lift the bars out of the baking tin before cutting.
For the crust
Prepare the crust by combining flour, sugar, salt and butter cubes in a bowl. With your fingers, lightly rub the butter and flour mixture togther till it resembles breadcrumbs.
Press this mixture into the prepared baking tin, bake for 10 minutes.
For the filling
Prepare the filling by combining the softened cream cheese and sugar in a bowl. Cream together until smooth. Now mix in the flour, lemon juice, eggs and vanilla extract until fully incorporated.
Pour prepared filling over baked crust and return to the oven for 30 minutes.
Allow to cool for 30 minutes and put the entire tin into the fridge to chill for 4 hours. Lift the chilled preparation out of the baking tin and cut into fingers.
Sprinkle with powdered sugar and serve.
