Aliv Laddoo
Ingredients
• 1/2 cup aliv/halim/garden cress seeds
• 1/2½cup coconut water
• 1 cup palm jaggery
• 1.5 cup coconut, grated
• 2 tbsp cashews, finely chopped
• 2 tbsp almonds, finely chopped
• 2 tbsp ghee
• 1/4¼tsp cardamom seeds
• 1/4 tsp nutmeg powder
Method
Take a small bowl and add garden cress seeds.
Add coconut water and mix well.
Soak this until the seeds swell properly, about an hour.
Meanwhile, heat a pan on medium flame and add palm jaggery with little water.
Stir well until jaggery melts completely. Once it turns to one-string consistency, add soaked garden cress seeds and give a good mix ensuring there are no lumps.
Add grated coconut and mix well.
Lower the heat and add ghee and mix well.
Add chopped cashews and almonds, continuing to mix thoroughly.
Add cardamom seeds and nutmeg powder, and give a final mix.
Turn off the heat and allow the mixture to cool for a minute.
While it is still slightly warm, take a fistful of the mixture and mould into spheres for the laddoo.
Nutritious garden cress seeds laddoos are ready to serve immediately or stored in an airtight container for 15 days at room temperature.
