Goa Garnishes: Go With The Flow
Go with the Flow
An over-indulgence of anything, even something as pure as water, can intoxicate– apt words by Criss Jami. But here the beauty of Baga creek enthralls... yes funnily enough that is where the parking begins. Inhale the mystic beauty before you enter– a serendipitous pathway beckons; follow up the steps to the heritage house Filomena Cottage, built by Joao Luis D'Souza in 1928. Stefan Marais greets you with his boyish charm– his passion within has expanded to encompass the beauty around and his vision within Go With The Flow. With 120 covers to choose from, sit on the verandah or perch at the bar with its lit counter. Or just sink into those white comfortable cane chairs in the garden.
Don't miss out on those inspired drinks... the Flow Hugo comprises of Elderflower cordial, mint, lime, Sula Brut sparkling and the Feni Sunny Side Up, an ode to cashew feni served with coconut rum, pineapple juice, fresh cream and coconut milk– creative mixes with local ingredients. Make your choice as you study the menu. With the growing trend of Keto practitioners and vegans around, Go with the Flow has a dedicated menu for the same. For starters, the Labneh Cheese Plate, homemade labneh with Za'atar, olive tapenade and grilled bread is a cheesy affair with the Beef Tataki for company. The beef is lightly seared rare marinated with a hint of Kashmiri chilli and spring onions with black pepper cream.
While you comb through the ingredients of mains, do ask for the Raw Red Snapper Carpaccio, sushi grade fish tenderly marinated with passion fruit and lime with a hint of chilli and olive oil served with cucumber salad. Zesty delights enough to titillate one's palate for the mains. Move over to the Vietnamese style Roast Belgian Import Pork Belly with a sliver of crackling belly rested over a succulent choice of meat, a stimulating concern for one's ever expanding waistline. For the health conscious diner, the Chermoula Frilled Fish Fillet is a Tunisian inspired herb and spice fish marinade served with ratatouille and crispy potatoes. The Death by Chocolate will send you to stratospheric bliss, with chocolate mousse waffle cones delicately positioned with mud chocolate pie and a vegan coconut rice pudding. At the end, you could be blamed for 'over indulgence', but the intoxication of the experience will have you wanting to just go with the flow.
