Black Rice Pudding
Ingredients
• 1/2 cup black rice/wild rice
• 3 cups water
• 1 cup coconut milk
• 2 tbsp cashew nuts
• 50 g jaggery (to taste)
• 3 powdered cardamoms
Method
Wash and soak the rice for 2-3 hours.
Boil water, add the rice and cook till three-fourth is cooked. Add the coconut milk and jaggery.
Stir well and cook for a few minutes.
Lower the flame and cook till soft. Add the cardamom powder.
Garnish with broken cashew nuts.
