Stuffed Eggplants
Ingredients
• 8 small eggplants
• 3 tbsp oil • a few coriander leaves
For stuffing (grind the following)
• 1 tsp coriander powder
• 1 tsp chilli powder
• 1 tsp sugar
• 1 tsp mango powder (or lemon juice)
• 1.4 tsp fenugreek seeds
• 1/2 tsp turmeric powder
• 2 large onions
• saIt to taste
Method
Wash and pat the eggplants dry.
Slit each into four, length-wise, keeping the stem. Stuff them with the masala paste.
Heat the oil and cook on low flame. Turn the eggplants carefully.
Cook till they are soft and tender.
Garnish with coriander leaves.
