Shami Kebab
Ingredients
• 500 g kheema
• 100 g soaked chana dal
• 12 peeled garlic cloves
• 1/2 ginger, peeled
• 1/2 tsp black pepper
• 10 cloves
• 3 black cardamoms
• 2 cinnamon sticks
• 3 whole red chilli
• salt to taste
• 2 tsp cumin seeds
• 2 onions, chopped
• 1 tsp green chilli, chopped
• 1 tbsp green coriander
• 2 tbsp refined oil
Method
In a pressure cooker, add soaked chana dal, kheema and all the ingredients except oil, onion, green chillies and coriander with a cup of water and cook till 4 to 5 whistles.
Open the pressure cooker and allow the mixture to cool.
Grind the mixture on sil batta, or mincer or mixer grinder as per availability.
Remove any whole spices left in the mince.
Add chopped onion, green chillies and coriander to the mixture.
If required you may add roasted chana powder to bind the mixture.
Divide kebab mixture in equal portions and form a patty.
Lightly dust the patty with some flour. Shallow-fry the kebabs on both the sides on a slow flame.
Enjoy these kebabs with onion and green chutney.
