Pollo Pueblo
(Crumbed Stuffed Chicken)
Ingredients
150 g chicken breast
5 g bacon
2 g jalapeno
3 g Jack cheese
1 g green chilli
2 g sour cream
salt to taste
pepper powder to taste
1 egg
5 g flour
20 g tortilla crumbs
5 g red pepper coulis
30 g chicken jus
15 g broccoli
15 g zucchini
20 g boiled rice
1 lemon
5 g parsley
15 g peppers
15 g baby carrot
15 g asparagus
10 ml oil
Method
Mix together cooked chopped bacon, Jack cheese, jalapenos, sour cream, green chilli, salt, pepper powder and egg to make the mixture for chicken stuffing. Dust in flour and crumb it with tortilla crumbs. Pan sear the chicken in olive oil and bake it in the oven till cooked. Serve it hot along with parsley rice, grilled asparagus, baby carrots, peppers, zucchini and broccoli. Serve chicken jus and pepper coulis along.
