Pavlova, Chocolate Mousse, Shards & Berries



Ingredients
8 egg whites
pinch of salt
360 g caster sugar
2 tsp vinegar
vanilla essence
1 tbsp cornflour
To serve, chocolate mousse, seasonal fruits, chocolate shards

Method
Preheat oven to 150 degrees. 
In a large bowl, whip egg whites with salt until soft peaks form. 
Add sugar, one spoon at a time, whipping until sugar is dissolved between additions.
Add vanilla and vinegar, followed by sieved cornflour and continue whipping at a reduced speed.
Sieve cornflour over a greased tray and using a spatula create 5 small pavlovas in desired shape.
Place in oven and immediately drop temperature to 120u00b0 and bake for 45 minutes.
On a plate, add a layer of pavlova.
Top it with a layet of chocolate mousse.
Add chocolate shards and berries on top, as shown in the picture.
