Nasi Goreng, Cottage Cheese Steak, Rice Crackers



Ingredients
250 g Basmati rice, cooked
25 g garlic paste
50 g onion, finely sliced
5 g lemongrass
5 g kafir lime
125 g yellow curry paste
100 g beans, finely chopped
100 g carrot, finely diced
10 ml dark soy sauce
125 g cottage cheese, cut into steaks
25 g chilli jam
150 g rice papad, fried
30 g spring onion
10 g salt
1 tsp ghee

Method
Heat a large wok over high heat.
Add 1 tsp ghee and heat until it smokes.
Add garlic, lemongrass, lime and onion and stir-fry for 1 minute or until brown and fragrant. 
Add yellow curry paste followed by beans and carrot and cook for 1 minute.  Add soy sauce and set aside. 
Marinate cottage cheese in chilli jam and dash of dark soya.
Once done, cook in pan with a drizzle of ghee. 
Spoon nasi goreng into serving bowls. Top with a cottage cheese steak and rice papad.
Garnish with spring onions.
Serve immediately.
