Orange Marmalade

Ingredients

• 2 cups dry mahua flower

• 2 fresh oranges

• 4 tbsp jaggery powder

• 1 tsp desi ghee

 

Method

Take dry mahua flowers, clean and finely chop them, keep aside. Take out orange zest from fresh orange (1 tsp) and keep aside. Now take same orange and peel it well. Take out the orange segments from it and keep aside.

Take out juice from freshly squeezed oranges (1/2 cup orange juice)

Take a saucepan, add 1 tsp ghee, now add finely chopped mahua, heat the pan on low, sauté it well till it gets a nice fragrance. Now add orange juice and jaggery, stir it well and let it simmer, then add orange segments and mix. Stir continuously until cooked and it gets a marmalade consistency. 

Turn off the heat and add orange zest, mix it well and keep aside (let it cool). Transfer it to a glass jar.
