Baklava Cheesecake

Ingredients
For the base
• 200 g NutriChoice Digestive biscuit
• 100 g butter
• 2 g salt
• 30 g sugar
For cheesecake filling
• 100 g icing sugar
• 100 g Greek yogurt
• 450 g cream cheese
• 3 tbsp cornflour
• 1 tbsp lemon juice
• 200 g condensed milk
• 40 g whipping cream
• 1 g lemon zest
For baklava syrup
• 200 ml water
• 200 g sugar
• 1 tbsp lemon juice
• 100 ml honey
• 5 g cardamom
Method
For the base
Crush the biscuits and roast them for 15 minutes at 80° C.
Set in a butter-laced mould.
For cheesecake filling
Mix all ingredients for the filling and whip it till nicely mixed.
Pour this mixture over the base and spread evenly. Sprinkle sugar on top.
For baklava syrup
Melt the ingredients for the syrup.
Final step
Bake the whole cake In an oven on a blancher at 160° C for 50 minutes.
Remove from oven and put it in a fridge to settle. Pour the syrup over.
Cut into portions and serve.
Garnish with baklava cigars.
