Oysters on the Half Shell with Green Apple Mignonette
Ingredients
• crushed ice
• 12 oysters, shucked, on the half shell
• 1/2 cup tarragon vinegar
• 1/4 of a Granny Smith apple, finely diced
• 2 tbsp minced shallots
• 2 tsp minced fresh parsley
• black pepper to taste
Method
Arrange crushed ice on a platter, then place oysters on ice.
Combine vinegar, apple, shallots, and parsley; season with pepper. Mignonette is ready.
Serve oysters with mignonette.
