Makai aur Akhrot ki Seekh (Barnyard Millet)

 

Ingredients

450 g potatoes, boiled and coarsely grated

260 g sweet corn, boiled

1/2 tsp garam masala powder

2 tbsp gram flour or chickpea flour

2” ginger, roughly chopped

3 green chillies

5-6 tbsp barnyard millet

salt to taste

oil or ghee for grilling

Method

Add the ginger and chilli in a grinder and grind to a paste. Set aside.

Add the sweet corn in a blender and coarsely blend to a rough mix. Put in a large mixing bowl along with the ginger-chilli paste. Add potato and garam masala and barnyard millet.

Mix well

Add this to the sweet corn kebab mix. Knead lightly. Cover with cling film and refrigerate for 10 minutes

Add the gram flour to the kebab mix and stir well. Divide the mix between 6-8 skewers and shape along the skewer.

Roast in tandoor carefully for 12 minutes until golden brown.

Serve with naan and green chutney or mint raita.
