Moringa Pearl Bhel
Ingredients
• 1/2 cup akkha masoor (whole red lentil), soaked overnight
• 1 cup fresh sahjan ke bheej (moringa pearls)
• 1 tbsp fresh anardana (pomegranate seeds)
• 1 fresh dark green chilli, chopped
• 2 tbsp finely chopped Madras onion
• 1 tbsp freshly squeezed lemon juice
• 1/2 tsp roasted cumin powder
• 1 tbsp chopped spring onion leaves
• pinch of black pepper,freshly ground
• 2 tbsp ghee
• sea salt to taste
Method
Take a moringa pod, roast it well in the oven or on the stove and remove the seeds from it. Keep it in a bowl.
Heat a pan. Add 1 tbsp ghee and roast the fresh drumstick pearls, till they get nice and crisp with a crunchy texture. Remove from pan and keep aside.
Now, add another tbsp ghee to the pan and roast the soaked masoor till it gets a crisp texture.
Take a mixing bowl, add cumin powder, crushed black pepper, sea salt. Mix it well and keep aside.
Take a large mixing bowl, add roasted drumstick pearls and roasted whole masoor, then add chopped green
chilli, chopped Madras onion, fresh anardana, and sprinkle dry masala on top. Mix it well.
Add squeezed lemon juice, give it an instant mix and place it on a serving plate.
Garnish with chopped spring onion leaves and serve.
