White Pumpkin Race Kootu
Ingredients
• 500 g white pumpkin
• 100 g split Bengal gram
• 1/2 cup freshly grated coconut
• 2 small-size green chillies
• 1/2 tsp cumin seeds
• 1 tsp turmeric powder
• 1 tsp mustard seeds
• 1 dried red chilli
• few curry leaves
• coconut oil, for tempering
• salt as per taste
Method
Peel and dice the white pumpkin into small cubes. Boil them with turmeric and salt. Similarly cook the split Bengal gram (chana dal) with turmeric and salt. It should be cooked well but firm in texture and not mushy. When the white pumpkin is almost done, add the cooked chana dal to it. Grind the grated coconut, cumin seeds and green chillies into a paste. Add this paste to the mixture and bring it to a boil. Temper mustard seeds, dried red chilli and curry leaves in hot oil. Pour this seasoning over the mixture.
