Hot Garlic Sauce

Ingredients

• 12 g ginger

• 10 g dried chilli

• 10 g scallion

• 10 g garlic

• 12 g sugar

• 12 g MSG (seasoning)

• 12 g table salt

• 250 ml black vinegar

• 120 g tomato ketchup

• 120 g chilli paste

• 120 ml sunflower oil

• 12 g potato starch

 

Method

Heat oil in a wok.

Add dried chilli, sliced scallon,
garlic & ginger.

Sauté for 5 minutes.

Add some water, black vinegar,
ketchup & sugar.

Bring to a boil.

Allow to simmer for 20 minutes.

Add chilli paste.

Adjust thickness with potato starch. Add seasoning and taste.

Heat oil in a wok. Add sliced ginger, scallions and base sauce. Adjust thickening with potato starch.
