Coq Au Vin
As the name suggests, this dish has chicken with wine accompanied with carbohydrates and proteins in the form of potatoes and vegetables
Ingredients
• 2 chicken breasts
• 3 g thyme
• 10 g garlic
• oil
• 10 ml Worcestershire sauce
• 30 g mashed potato
• 10 g brocolli
• 10 g green zucchini
• 10 g yellow zucchini
• 5 g carrot
• 5 g beans
• 10 g cocktail onions
• 50 ml demiglaze
• 30 ml red wine
• 8 g salt
• 5 g black pepper powder
Method
Marinate chicken breasts with oil, garlic, Worcestershire sauce, black pepper powder, salt, for at least half an hour.
Blanch all the exotic vegetables and keep aside.
Keep the mashed potato and demiglaze sauce ready.
Now grill the chicken on a griller plate by turning both the sides.
When the chicken is about to cook flambé it with the wine, or pour red wine on the chicken while grilling by keeping 10 ml red wine aside for the sauce.
For plating
Cook the demiglaze by adding red wine to sauce consistency with the addition of cocktail onions.
Now put the chicken in sauce for few seconds to glaze, add little butter which will give a shine to the glaze.
Serve the grilled chicken hot with buttered vegetable, mashed potato and red wine sauce on side.
