Veg Mulligatawny

 

Ingredients

• 50 g boiled dal (lentil)

• 10 ml oil

• 5 g garlic, chopped

• few sprigs curry leaves

• 10 g onion, chopped

• 1 chilli, chopped

• 1 tsp Madras curry powder

• 20 g pineapple/apple

• 2 g turmeric powder

• 2 g coriander powder

• salt to taste

• 50 ml coconut milk

• 20 g chopped vegetables

• 50 g rice, boiled

• 1 lemon

Method

Boil dal and keep aside.

Heat oil in a pan, add curry leaves, chopped garlic and stir-fry, add onions and cook for a few minutes.

Add all the powder masalas as mentioned above, give it a nice stir.

Add the boiled dal and stock as per consistency, let it cook to impart all the flavours. Strain the soup and put on a pan, now add the blanched vegetables, let it cook for few minutes.

Finish with coconut milk and season it with salt to taste

Serve hot with lemon wedges and boiled rice on the side.
