Aloo Koiralo
Ingredients
Section 1
• 1/2 kg koiralo (mountain ebony buds)
• 3 boiled potatoes (optional)
• 1 tsp red chilli powder
• 3 tsp garlic paste
• 1/4 tsptimur powder
• 1.5 cup roasted sesame powder
• 2/3 cup lemon juice
• 1/2 tsp roasted cumin powder
• 1/2 cup water
• 1/2 cup mustard oil
• salt to taste
Section 2
• 1 tsp fenugreek seeds
• 1 tsp turmeric powder
• 5 green chillies, slit lengthways
Method
Boil the koiralo buds till they are cooked but still crunchy (approximately 5-10 minutes), dice the boiled potatoes into cubes and put all the ingredients from section I in a bowl and mix gently. Heat the oil in a pan till it smokes and add the fenugreek seeds till they turn dark. Add the green chillies and stir for 1 minute, take the pan off the fire and add turmeric powder to the oil, swirl around and pour it over the koiralo potato mixture. Mix again and serve at room temperature.
