A '6-cm chef' enthralls one with his culinary mastery from Marseille, France. Grand Hyatt brings to Goa the entertaining Le Petit Chef, showcasing his storytelling journey of Marco Polo, the famous explorer in this shared, seated culinary experience. Chef David Ansted takes you on a trail of mystique and flavour tracing the journey of Marco Polo from France to Arabia, India, to the Himalayas, China, and back to France in this 90-minute fable. With the help of 3D Projection Mapping technology, the show captivates one’s imagination. Lily, the storyteller and LPC’s confidante pairs the journey course by course with themed music, props, and an exquisite tale. As one is seated in the dining theatre, the muted ambience showcases the spotlight on the table – Chef’s canvas of creativity with projection and sound. A miniature chef comes to life on one’s dinner table, all through the magic of visual mapping. We start off the culinary trail with the first course – Voyage from Marseille. A creamy tomato and fennel soup with Ricotta cheese dumpling, rosemary & black pepper biscotti, is joy in a cup focusing on technique and nuances of French cooking. The use of tone and voice needs special mention and it sounds like the Minions conversing in English minus the gibberish we all have come to love.
A wine pairing is on offer with a curated wine list showcasing the regions of France, Italy, Chile and India. The storyteller appears for the second course taking us on a journey to the Realm of Arabia. The cuisine showcases regional technical prowess with the Shanklish and Haloumi Filo Parcels with smoked beetroot, Medjool date, olives and almond picada. A crash course to enjoy the flavours of the meal is meted out by Lily and Chef narrates the story of his time in an Arabian bazaar filled with spice and action. The story progresses on the wings of a befriended sparrow to the Royals of India with a delicate balanced barnyard khichdi with chicken breast stuffed with apricot and nuts in creamy tomato gravy. A sought-after break in courses and storyline, is in the fourth course taking place across the snow-clad peaks, all the way to Nepal.
Intermezzo from the Land of the Clouds. A barley, mountain liquorice & orange sorbet is presented on a bed of rocks aka dry ice and water is gently poured over depicting the vapours of the frigid Tundra in every chilled slurp. An immersive experience, this is a creative palate cleanser. The Land of the Dragon has a fire spectacle from the mouth of a miniature dragon with a braised lamb leg with bokchoy and shiitake mushroom glazed with ginger scallion sauce served with a side of steamed jasmine rice.
As the show winds up and many a belly is bursting at the seams, LPC takes us back to France, completing the circle of intrigue and wonder. The Crème Brûlée Grande is a work of art and eggs you on to break into Chef’s creative artistic brilliance.
