Khatta Meetha Baingan

Ingredients
• 1/2 kg long baingan (brinjal)

• 1 onion, finely sliced • 2 tspdhania  powder (coriander) • 1 tsp lal mirch powder (red chilli) • 2 tsp adrak, ground (ginger) • 1/2 tsp hing (asafoetida)  • 1 tsp sugar

• 1/2 katori imli ka paani  (tamarind water)

• 8kaju (cashews)
Method

Cut the baingan lengthwise into 2. Fry. Keep aside.
Fry the finely sliced onions. Keep aside. Fry the kaju and keep aside.
Heat very little oil, add hing, ginger paste, dhania powder, lal mirch powder, then imli water & sugar. Fry well. Add baingan, mix well and keep on a slow flame, for 5 minutes. Remove from the fire, add onions & keep before serving.
