Jackfruit Bruschetta

Conversely, this heaty fruit works well in the summer as it helps maintain the body temperature from within. Jackfruit is a source of good calories, too.  

Ingredients
20 jackfruit seeds
10 jackfruit pieces (ripe and seedless)
2 fresh red chillies, chopped
4 Madras onions, chopped
juice of 1/2 lemon
10 mint leaves, chopped
1/2 tsp freshly ground black pepper
rock salt to taste
10 fresh mint leaves
10 toothpicks for garnish


Method
Take a roasting pan, place jackfruit seeds and roast in the pre-heated oven for 3 minutes on 150° C.
Chop each seed into two, this helps to peel off the white skin easily.
Wash the seeds thoroughly before using them and then boil in enough water till tender.
Remove and cut into the small dice shapes.
Take a mixing bowl, add diced jackfruit seeds, red chilli, Madras onion, mint leaves, lemon juice, salt, black pepper and mix well.
Check seasoning.
Take a serving plate, place the ripe jackfruit flesh topped with jackfruit seeds mixture.
Garnish with mint leaves with the help of toothpick.
Serve fresh.
