Ingredients 250 g Basmati rice 50 g green peas 50 g cauliflower, chopped 50 g elephant foot yam cubes 50 g whole garlic 50 g onions, finely chopped 50 g besan gatta 1 tsp chilli powder 1/2 tsp turmeric powder 100 g curd 50 g green chilies, chopped 2 tsp ginger garlic paste 4 tbsp ghee or refined oil
Method Boil the rice separately and keep them aside. In a pan, heat ghee. Add finely chopped onions and sauté till they are golden brown. Take out 1/4th of them on a tissue paper and set aside for garnishing. In the pan with rest of the onions, add the ginger garlic paste, chilli powder, turmeric powder, curd and all the chopped vegetables and cook till they are done. Fry the yam cubes separately. Once done mix the gatta and fried yam with the vegetables. Serve in a bowl with alternate layers of rice and vegetables. Garnish with green coriander, mint leaves and fried onions.
