Arbi Steak
With Green Onion Salsa
This recipe by Chef Bhairav Singh is inspired by the cuisine of the Nawabs and Nizams.
For Arbi steak
Ingredients
250 g colocasia root (arbi)
7 black peppercorns
3 green chillies
1 tbsp gram powder, roasted
1 tbsp desi ghee
salt to taste
Method
Wash and clean the colocasia roots, if required scrub it well to remove the mud.
Boil well. Once done, remove it from water and let it cool at room temperature.
Once cooled, peel it. Grate it and transfer to a mixing bowl.
Add chopped green chillies, freshly-crushed black pepper, roasted gram powder and salt.
Mix it well, and make two equal-sized arbi steaks.
Put the arbi steaks on a griller and grill well by applying ghee on both sides.
Once it gets crisp, and a grilled texture appears, remove from griller and serve hot and fresh with green onion salsa.
For green onion salsa
Ingredients
3 spring onions
4 green chillies
1 lemon
2 tbsp mustard oil
1/2 tsp candy sugar
Himalayan salt to taste
Method
Wash and dry the spring onion greens.
Finely chop and keep aside in a bowl.
In a stone muddler, add chopped green chillies, chopped spring onion, candy sugar, salt and lemon juice.
Muddle to make a coarse paste.
Check seasoning.
Transfer the paste to a glass bowl and add mustard oil.
Mix well.
Serve with arbi steak.
