Hummus With Chilli Thecha

Ingredients
120 g double dollar chickpeas
30 g tahini 
4 g salt
3 g black pepper
10 g garlic
3 g parsley
1 g red chilli powder
30 ml olive oil
1 pita bread
salted peanuts, for garnish

Method
Boil the chickpeas and grind to a fine paste.
Mix in the tahini paste.
Add garlic and parsley and grind again to a smooth paste and add to the serving bowl.
Fry coriander leaves, green chilli and mint.
Pound them in a mortar to get a coarse paste.
Season with salt and pepper.
Garnish the hummus with this paste.
Add salted peanuts.
Sprinkle red chilli powder on the hummus and drizzle some extra virgin olive oil.
Served chilled with pita bread.
