When Aalap Shah met Chef Tarak Das, it was a blessed day for Amdavadi foodies. Aalap Shah just wanted to eat the food he liked, just the way he liked it, which prompted him to start his own enterprise. His friend and chef, Tarak Das saw merit to his vision and helped him carve out the menu that would accomplish his goal. Together, they removed all frills and trills from fine dining and chopped it down to simply eating out of a bowl.     

First to hit my palate at Lollo Rosso was the Santa Fe Mexican Bowl, brimming with a charcoaled smoky flavour. The meat is grilled on a small in-door grill while the sauces are smoked just underneath as the meat is being cooked, adding extra depth of flavour to the dish. Topped with the Latin-American staple Pico de Gayo, sour cream, lettuce, freshly-made nacho chips, and green avocado slices on the side, this bowl is la fiesta for your taste buds.

Next was the Mediterranean classic Gyro, in a bowl of course! The exotic alchemy of cranberry, mix couscous, tahini made from sesame seeds and olive oil, fresh cucumber, balsamic glazed onions, and garlic labneh screams Greece with each bite. This assortment is completed with the Greek classic tzaziki sauce, small pita bread, and French fries served with a beetroot cream dip topped with walnuts and peppers. Alexander the Great would return just to conquer this bowl, if he could, that is.

Be it Greek cuisine, Mexican, Korean, Burmese, Indonesian, Lebanese, Thai, or even Indian, Aalap Shah and Chef Tarak Das have squeezed out the essentials of each right down to a bowl. The popularity of the restaurant is evident with the second one opening within a year of the first one taking off. "What’s better than one Lollo Rosso, two Lollo Rossos," said Aalap Shah and Chef Tarak Das. And Amdavadis seem to agree.
