Sunehari Chai

Sunehari Chai (golden tea) is loaded with immune-boosting ingredients and a ton of antioxidants, vitamins and minerals. The stronger your immune system, the less chance you’ll have of falling ill. This recipe is one of my favourite memories from my nomadic food journeys.

Ingredients
• 1” ginger (adrak)
• 10 holy basil leaves (tulsi patte)
• 1/2½tsp turmeric powder (haldi)
• 5 black peppercorns (kalimiri)
• 1 tbsp palm candy (taal misri)
• 1 lemon (nimbu)
• 4 cups water

Method
Take a teapot, add water and let it boil.
Now take a stone pestle, add black pepper and ginger and crush it well.
Once water starts to boil, add crushed black pepper and ginger to the teapot and boil on medium flame for one to two minutes.
Now add taal misari, haldi and tulsi leaves, let it infuse for a while, then turn off the flame.
Add freshly squeezed lemon juice and stir well.
Strain and serve hot.
